Joe’s Miami Omelet

Ingredients
- 3 eggs lightly beaten
- 1/2 tsp. dried chives or 1 tsp. fresh chives
- 3 tbsp. plain Greek yogurt
- 1 banana
- honey to taste
Instructions
- Lightly beat 3 eggs in a bowl, mix in the chives. Prepare a standard omelet, do not fold over.
- Remove omelet from pan once it is firm. Place the yogurt in the center. Top with sliced banana and honey to taste.
- Fold the omelet in half and top with more honey and yogurt
- Serve and enjoy!
Notes
This recipe was inspired by a small cafe in Coconut Grove Florida back in the 1980s. It’s an easy and very tasty brunch for family and friends.
